HealthEase site manager Cat Cavotta hosted a Healthy Holiday Bake-Off at one of the corporate fitness centers we manage in the Philadelphia suburbs. This fun (tasty) competition inspired employees to bring in their favorite desserts that are lower in refined sugars and saturated fats. Here’s the winning recipe for you to try!
Chocolate Peanut Butter Power Bites
Makes 24 snack bites
- 1 c. old-fashioned oats
- 1 c. natural peanut butter
- ¼ c. ground flaxseed
- ¼ c. agave nectar (or honey)
- 1 tbsp. cocoa powder
- 1 tbsp. cocoa nibs (or mini chocolate chips)
- 1 pinch salt
Stir everything together in a small mixing bowl until well combined.
Test to see if the mixture will hold together to form the bites. If it’s too dry, add more peanut butter (or, if you like more sweetness, agave nectar). If it’s too wet, add more oats or ground flaxseed.
Form into balls, approximately a scant tablespoon each.
Arrange power bites on a baking sheet covered with aluminum foil and freeze until set, about 1 hour. (No baking required!)
